Who said desserts can't be grilled? An excellent easy dessert option is this Grilled Pecan Pie. When preparing this Pecan Pie recipe, make sure not to overbeat the eggs in the filling, as that can create too much foam when grilling.
To prepare the crust for the pecan pie, place the cubed butter, flour mixed with salt, the egg, and sugar in a mixer. Beat everything at medium speed until a dough forms. Reserve in the refrigerator for 15 minutes.
Roll out the dough using a rolling pin and place it on the Weber® Griddle or a mold that can withstand high temperatures. Cover completely, including the sides. Reserve.
Prepare your grill for indirect medium heat (350º - 450ºF or 175º - 232ºC).
In a bowl, place the maple syrup, corn syrup, vanilla, and mix until the ingredients are combined. Add the melted butter and mix again. Finally, add the 3 eggs and continue stirring until you obtain a homogeneous mixture.
Pour the mixture over the crust of your pie, add the pecans in halves, chopped, or whole, and finally, sprinkle a little salt over the surface. Place the pie on your grill over indirect medium heat for 35-40 minutes.
Remove the pie from the grill when the edges of the filling are firm and the center has a gelatin-like consistency. Let it rest for 15 minutes and serve.
