Prepare your Weber® grill for medium indirect heat (350º - 450ºF or 175º - 232ºC). Place a cast iron skillet over indirect heat for 10 minutes to preheat.
To prepare the onions, add olive oil to the skillet, along with the onions, and sauté for 2 minutes. Incorporate the cinnamon, chili powder, sugar, and Tabasco-style sauce. Stir constantly until the onions begin to soften, season to taste, and remove the skillet from the grill. Set aside.
Place the sausages on your grill over medium direct heat for 8 to 10 minutes, turning them occasionally.
During the last minute of cooking the sausages, heat the buns for 1 minute over direct heat, being careful not to burn them.
To serve, place the sausage inside the bun and top with some onions and condiments of your choice.
