Shrimp Taco with Chorizo a la Diabla

  • 16 fresh shrimp, medium, clean
  • coarse salt

  • 2 tablespoons fresh cilantro
  • 1/2 kilos corn tortillas
  • 1 teaspoon unsalted butter
  • 2 guajillo chiles, clean and hydrated
  • 3 dried árbol chiles, clean and hydrated
  • 1 chipotle chile in adobo sauce
  • 1 clove garlic
  • 1 cup water
  • 1 tablespoon apple cider vinegar
  • 1/2 onions, cut into small cubes
  • 80 grams chorizo

  • Prepare your Weber® grill for high direct heat (450º - 550ºF - 232º - 287ºC). Blend the guajillo chili, árbol chili, chipotle, garlic, water, and vinegar until you get a smooth paste. Strain and set aside.
  • Preheat the Weber® GBS Wok or a high-temperature tolerant pan inside the grill for 5 minutes. Add the butter and sauté the onion, add the chorizo, and once it’s well browned, add the shrimp, cooking until they start to change color (about 6 to 8 minutes).
  • Add the chili paste to the pan and mix until combined. Season to taste with salt and pepper.
  • Serve in tacos, accompanied by cilantro leaves and your favorite sauce.
