Asparagus, Carrot, and Celery Soup

This asparagus, carrot, and celery soup is ideal for preventing urinary tract infections.

  • 1 jar asparagus, white or green
  • 2 carrots
  • 4 stems celery
  • 4 cups water
  • 2 cups soy milk, (or light lactose-free cow's milk)
  • 1 teaspoon salt
  • 1 teaspoon chicken consommé
  • 4 tablespoons olive oil

  • In a deep pot, we cook the carrot and celery; when the carrot is tender, we remove it from the heat.
  • In the blender, we place the carrot, celery, and drained asparagus (without the broth), add all the remaining ingredients except for the milk, and blend with the cooking broth of the vegetables, trying to obtain a smooth mixture.
  • In the same pot where we cooked the vegetables, we add the blended mixture along with the milk and let it boil, making sure the soup doesn't spill over on the stove, remembering that it contains milk and rises.
