Blueberry Cake

A dessert with only 180 calories per serving. Excellent recipe for blueberry cake for those who need low sugar intake.

  • 275 grams cranberries
  • 1 cup margarine, low in fat
  • 2 1/4 cups water
  • 1 cup splenda sugar, for baking
  • 2 teaspoons baking soda
  • 2 eggs
  • 4 1/2 cups flour
  • 1 teaspoon ground cloves
  • 1 teaspoon nutmeg, ground
  • 1 teaspoon cinnamon powder
  • 1/2 teaspoons baking powder
  • cooking spray

  • Before you begin, preheat the oven to 180°C.
  • Place a pot to boil two cups of water with the margarine and blueberries. Boil uncovered for 5 minutes. Let it cool and in the meantime, add the Splenda.
  • In the remaining quarter cup of water, dissolve the baking soda and stir very well. Beat the two eggs. Integrate the baking soda mixture and the eggs into the blueberry preparation.
  • In another bowl, mix the flour, cloves, nutmeg, cinnamon, and baking powder. Gradually incorporate this mixture into the preparation.
  • Preferably use a loaf pan and spray it with PAM. Pour the mixture into this pan and bake for 50 to 60 minutes.
