Crepes with Fruits and Cottage Cheese

These crepes with fruits and Cottage cheese are perfect to start the day! They are ideal for taking care of yourself while enjoying a delicious breakfast at the same time. The best part of these crepes is that they are made with ground oats, egg whites, berries, and Cottage cheese.

  • 1 San Juan® egg, for the crepe mixture
  • 1 cup San Juan® Egg Whites, for the crepe mixture
  • 1/2 cups almond milk, for the crepe mixture
  • 1/4 teaspoons salt, for the crepe mixture
  • 3/4 cups oats, ground, for the crepe mixture
  • 1 tablespoon coconut oil, melted, for the crepe mixture

  • For the crepe mixture: Blend the Huevo San Juan®, the Huevo San Juan® egg whites, almond milk, salt, ground oats, and melted coconut oil for 3 minutes or until you achieve a slightly thick texture. Transfer to a bowl and let it rest for 5 minutes.
  • Heat a crepe pan or a flat skillet over medium heat and spray with cooking oil, then add a ladle of the crepe mixture. Simultaneously, move the pan in a circular motion to spread the mixture across the entire surface of the pan. Cook for 2 minutes, flip, and cook the crepe for 1 more minute.
  • Remove from the pan and cover with plastic wrap to prevent the crepes from drying out. Repeat the process with the remaining mixture. Set aside.
  • When the crepes are ready, fold them into quarters and fill with Cottage cheese and fruit to taste.
  • Serve the crepes with fruits, Cottage cheese, and a little honey, then decorate with mint leaves.
