Cucumbers with Chicken and Almond Salad

This recipe for cucumbers with chicken and almond salad is the perfect snack to eat at noon. The chicken salad with almonds gives it a special flavor and they are prepared in just 20 minutes. It is important that you cut the base of the cucumber, so that it holds and you can fill it easily. In addition, you can substitute the yogurt for low-fat cream, to make it even lighter.

  • 1 cup chicken breast, unraveled
  • 1 cup almonds
  • 1 tablespoon chives, finely chopped
  • 2 tablespoons tomato, diced
  • 2 tablespoons celery, finely chopped
  • 1 cup plain yogurt, low in fat
  • 1 teaspoon garlic powder
  • pinches salt

  • 2 cucumbers
  • cherry tomatoes, to decorate
  • almonds, to decorate
  • chives, to decorate
  • lettuce leaf, to decorate

  • In a bowl, mix the chicken with the almonds, chives, tomato, celery, and yogurt; season with garlic, salt and pepper. Reserve until use.
  • On a board, peel and hollow the cucumbers, cut in half and fill with the chicken salad, decorate with cherry tomato, almonds and chives.
  • Serve on a bed of lettuce leaves.
