750 grams fish fillet
20 grams achiote, in bars
4 guajillo chiles, seedless and soaked in hot water
1/2 cups pineapple juice
1/2 cups orange juice
1 lime
30 milliliters apple cider vinegar
1/4 onions
1 garlic
1 teaspoon oregano
1 teaspoon paprika
2 teaspoons olive oil
12 corn tortillas
4 limes, for serving
4 teaspoons fresh cilantro, finely chopped

Blend the achiote, chiles, pineapple juice, orange juice, lime, vinegar, onion, oregano, paprika, and season with salt and pepper.
Marinate the fish in the previous mixture for a couple of hours.
Spray a skillet with 3 shots of PAM® Original and cook the fish over low heat until the sauce reduces; once cooked, shred the fish with a fork.
