Fish Tacos al Pastor

  • Pam® Original, canola oil spray
  • 750 grams fish fillet
  • 20 grams achiote, in bars
  • 4 guajillo chiles, seedless and soaked in hot water
  • 1/2 cups pineapple juice
  • 1/2 cups orange juice
  • 1 lime
  • 30 milliliters apple cider vinegar
  • 1/4 onions
  • 1 garlic
  • 1 teaspoon oregano
  • 1 teaspoon paprika
  • 2 teaspoons olive oil
  • 12 corn tortillas
  • 4 limes, for serving
  • 4 teaspoons fresh cilantro, finely chopped
  • salt

  • Blend the achiote, chiles, pineapple juice, orange juice, lime, vinegar, onion, oregano, paprika, and season with salt and pepper.
  • Marinate the fish in the previous mixture for a couple of hours.
  • Spray a skillet with 3 shots of PAM® Original and cook the fish over low heat until the sauce reduces; once cooked, shred the fish with a fork.
