Ingredients: Pam® Original, canola oil spray; 750 grams fish fillet; 20 grams achiote, in bars; 4 guajillo chiles, seedless and soaked in hot water; 1/2 cups pineapple juice; 1/2 cups orange juice; 1 lime; 30 milliliters apple cider vinegar; 1/4 onions; 1 garlic; 1 teaspoon oregano; 1 teaspoon paprika; 2 teaspoons olive oil; 12 corn tortillas; 4 limes, for serving; 4 teaspoons fresh cilantro, finely chopped; salt; pepper

Blend the achiote, chiles, pineapple juice, orange juice, lime, vinegar, onion, oregano, paprika, and season with salt and pepper. Marinate the fish in the previous mixture for a couple of hours.
