Fish Tacos with Achiote

  • 4 sea bass fillet
  • 4 tablespoons vegetable oil
  • 160 grams refried beans
  • 6 corn tortillas
  • 1 avocado
  • 3 tablespoons parsley
  • 1 cup red cabbage
  • 1/2 onions
  • 2 cloves garlic
  • 2 tablespoons achiote
  • 1 can chipotle chile
  • 1/2 cups orange juice
  • 1 1/2 teaspoons vinegar
  • 1 teaspoon vinegar
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 1 teaspoon pepper

  • For the marinade: Place all the ingredients in the blender. Cut the fish into strips and place them in a bowl with the marinade. Mix well to ensure all the fish is coated with the marinade. Cover and refrigerate for 1 hour; this will allow the fish to absorb more flavor.
  • Heat a skillet and add the fish along with some of the marinade. Turn it with tongs, being careful not to break the strips. Brush with the marinade for added flavor.
  • Warm the corn tortillas and spread the refried beans over the tortillas, then place the strips of fish on top. Accompany with red cabbage, light mayonnaise, and avocado.
