2 cucumbers
3/4 cups canned tuna in water, drained
3/4 cups surimi, chopped
1/2 cups onion, chopped
1/2 cups tomato, chopped
3 tablespoons cilantro, chopped
1/2 cups low-fat mayonnaise
3 tablespoons chives, chopped
3 tablespoons chipotle chile
1 tablespoon lime juice
1/2 cups avocado, chopped

Blend the tuna with the surimi, tomato, cilantro, mayonnaise, chipotle, and avocado in a food processor.
Peel the cucumber and create a hollow with an apple corer. Set aside.
Fill the cucumber with the tuna mixture using a pastry bag and cut into thin slices resembling a sushi roll.
Serve the low-carb tuna sushi and decorate with surimi, avocado, and green onion.
