Low-Carb Tuna Sushi

This low-carb tuna sushi recipe has very few calories, is easy to prepare, and is delicious; it must be part of your diet!

  • 2 cucumbers
  • 3/4 cups canned tuna in water, drained
  • 3/4 cups surimi, chopped
  • 1/2 cups onion, chopped
  • 1/2 cups tomato, chopped
  • 3 tablespoons cilantro, chopped
  • 1/2 cups low-fat mayonnaise
  • 3 tablespoons chives, chopped
  • 3 tablespoons chipotle chile
  • 1 tablespoon lime juice
  • 1/2 cups avocado, chopped

  • Blend the tuna with the surimi, tomato, cilantro, mayonnaise, chipotle, and avocado in a food processor.
  • Peel the cucumber and create a hollow with an apple corer. Set aside.
  • Fill the cucumber with the tuna mixture using a pastry bag and cut into thin slices resembling a sushi roll.
  • Serve the low-carb tuna sushi and decorate with surimi, avocado, and green onion.
