Oat Cakes

  • 2 cups oat flake
  • 3/4 cups water, warm, to hydrate the oats
  • 1/2 cups carrot, grated
  • 1/2 cups queso fresco, grated
  • 1/2 cups pumpkin, finely chopped
  • 1 egg
  • salt
  • pepper
  • olive oil
  • salad, for accompaniment

  • In a bowl, add the oats and pour in the warm water. Let it rest for 30 minutes or until the oats absorb all the water. Then, add the grated carrot, cheese, zucchini, and egg, then season with salt and pepper. Mix thoroughly and set aside.
  • Heat the oil in a pan over low heat, place enough of the oat mixture and flatten a bit to form the cake.
  • Cook the oat cakes for 4 minutes on each side and repeat until all the mixture is used. Place on paper towels to remove excess oil.
  • Serve the oat cakes on a plate and accompany with salad.
