Enjoy this delicious guilt-free carbohydrate sandwich, where we replace bread with a delicious portobello, filled with grilled chicken, accompanied by an exquisite and easy guacamole. It's perfect for a healthy meal.
1 chicken breast, (400 g) Cut into portions of 100 g each
1 cup spinach
1 red beefsteak tomato, sliced

Using a fork, mash the avocado and add the serrano chili, onion, tomato, cilantro, and season with lime, salt, and pepper. Set aside.
In a bowl, mix the olive oil with the garlic and oregano, and using a brush, coat the portobello mushrooms on all sides.
Heat a grill over medium heat, place the mushrooms, and cook for 2 minutes on each side.
On the same grill, place the chicken, brush with the remaining olive oil mixed with oregano, and cook until done. Cut into strips.
Spread a bit of guacamole on a portobello mushroom, add the grilled chicken, spinach, tomato, and top with another portobello. Serve with roasted zucchini.
