Heat three tablespoons of oil in a pan, add the garlic and sauté for a few seconds. Incorporate the onion and cook for one more minute. Add the spinach and cook for five minutes. Season with salt and pepper.
Heat the remaining oil in a small pot over medium heat and add the Del Fuerte® Seasoned Tomato Puree, cook for five minutes, stirring constantly. Add salt and set aside.
Place the mushrooms on a baking tray, add tablespoons of puree on top, spinach, and a piece of cheese.
Bake for 15 minutes. Remove and sprinkle with chili flakes.
