Stuffed Zucchini with Vegetables and Quinoa

These stuffed zucchinis will fill you with energy with their great fiber content and a delicious and spiced touch of curry, a very easy and healthy option to prepare.

  • 2 pumpkins, Italian
  • 2 tablespoons olive oil
  • 1 tablespoon onion
  • 2 carrots, cut into strips
  • 1 potato, cut into cubes
  • 2 red bell peppers, cut into strips
  • 1 cup quinoa, cooked
  • 1 teaspoon curry
  • breadcrumbs
  • salt and pepper

  • Preheat the oven to 180°C.
  • Cut the zucchinis lengthwise and remove the filling. Place in a bowl with water and set aside.
  • In a skillet over medium heat, add the oil and then the onion, add the carrots, potatoes, red bell pepper, and cook for 3 minutes, season with curry, salt, and pepper.
  • On a baking sheet, place the zucchinis and add the filling, top with breadcrumbs and bake for 10 minutes.
