Stuffed Zucchinis with Ham and Cheese

  • 4 zucchinis
  • 1/2 onions, finely chopped
  • 1 clove garlic, finely chopped
  • 1 tomato
  • 40 grams turkey deli ham, diced into small cubes
  • 100 grams Oaxaca cheese, shredded
  • 3 tablespoons olive oil

  • Preheat the oven to 170°C.
  • In a pot with boiling water, place the zucchinis and cook until soft.
  • Cut them in half and, using a spoon, remove the center and set it aside.
  • In a pot, add the olive oil and sauté the minced garlic. Then add the onion, the diced tomato, and cook until translucent.
  • Add the turkey ham and what you reserved from the zucchini. Season with salt and pepper to taste, cook for a few minutes, and set aside.
  • Fill the zucchinis with the previous mixture and add the Oaxaca cheese on top, then place them in a baking dish.
  • Bake for a few minutes until the cheese is melted and golden.
