  • 1 kilo skirt steak
  • water
  • 1/2 onions
  • 1/2 garlic heads
  • 5 guajillo chiles
  • 3 morita chiles
  • 1 tablespoon cumin
  • 1 tablespoon oregano
  • salt
  • tortillas for flutes
  • vegetable oil
  • green salsa
  • red salsa
  • lettuce
  • sour cream
  • panela cheese

  • Place the meat, water, onion, garlic head, guajillo chili, morita chili, cumin, oregano, and salt in a pressure cooker. Cover and cook over medium heat for 1 hour. Remove the meat and shred it.
  • Fill the tortillas with a strip of meat and close them to form the flauta. Repeat the process until all the tortillas are used. Secure with a toothpick and set aside.
  • Fry the flautas in a skillet with enough oil over medium heat for 5 minutes or until golden brown. Remove and place on a plate with absorbent paper.
  • Serve the flautas, drenching half with green salsa and the other half with red salsa. Garnish with lettuce, cream, and cheese.
