Cauliflower Pozole

  • 500 grams chicken breast
  • 1/4 onions
  • 1/4 cups cilantro
  • 1 leaf bay
  • 1 head garlic
  • salt
  • 4 guajillo chiles, clean and hydrated
  • 4 ancho chiles, clean and hydrated
  • 3 allspice berries
  • 1 teaspoon oregano
  • 1/8 onions
  • 1 cup water, of the chilies
  • 3 cups cauliflower, in small pieces (the size of pozole corn)
  • lettuce, to accompany
  • radish, to accompany
  • avocado, to accompany
  • oregano, to accompany
  • lime, to accompany

  • In a pot with water, add the chicken breast, onion, and cilantro, and cook for 30 minutes or until fully cooked.
  • On a cutting board, shred the chicken and set aside.
  • Blend the chilies, allspice, oregano, onion, garlic, and one cup of chicken broth for 3 minutes and pour into the broth.
  • Add the cauliflower and cook for 20 minutes. Season with salt.
  • Serve the pozole and accompany with the meat, lettuce, radish, avocado, oregano, and limes.
