Chicken in Red Wine

  • 1 tablespoon butter
  • 2 tablespoons olive oil
  • 1/4 onions, finely chopped
  • 2 cloves garlic, finely chopped
  • 3 carrots, sliced
  • 2 potatoes, cubed
  • 100 grams bacon, cut into large pieces
  • 1 can button mushrooms
  • 1 bunch parsley, washed and chopped
  • 500 milliliters red wine, can also be sherry
  • 500 milliliters chicken broth, or hen
  • 6 chicken thighs, skinless

  • In a large pot, melt the butter and add the olive oil.
  • Season the chicken thighs with salt and pepper and sear them for 1 minute on each side in the pot with butter and olive oil. Remove. Set aside.
  • In the same pot, fry the bacon until semi-golden. Remove. Set aside.
  • In the same pot, add the onion, garlic, and let it fry for 1-2 minutes.
  • Add the carrot, mushrooms, and let fry for two more minutes.
  • Add the previously fried bacon and mix.
  • Add the sliced potato and form a bed with everything.
  • On top of the bed, place the chicken thighs and cover them with all the parsley.
  • Add the wine and chicken broth.
  • Season with salt and pepper and let cook for 1 hour on low heat with the pot covered.
  • In the last 10 minutes, uncover the pot to reduce the juices.
