1 tablespoon butter
2 tablespoons olive oil
1/4 onions, finely chopped
2 cloves garlic, finely chopped
3 carrots, sliced
2 potatoes, cubed
100 grams bacon, cut into large pieces
1 can button mushrooms
1 bunch parsley, washed and chopped
500 milliliters red wine, can also be sherry
500 milliliters chicken broth, or hen
6 chicken thighs, skinless

In a large pot, melt the butter and add the olive oil.
Season the chicken thighs with salt and pepper and sear them for 1 minute on each side in the pot with butter and olive oil. Remove. Set aside.
In the same pot, fry the bacon until semi-golden. Remove. Set aside.
In the same pot, add the onion, garlic, and let it fry for 1-2 minutes.
Add the carrot, mushrooms, and let fry for two more minutes.
Add the previously fried bacon and mix.
Add the sliced potato and form a bed with everything.
On top of the bed, place the chicken thighs and cover them with all the parsley.
Add the wine and chicken broth.
Season with salt and pepper and let cook for 1 hour on low heat with the pot covered.
In the last 10 minutes, uncover the pot to reduce the juices.
