To boil the egg: heat a pot with enough water until it boils, then add the white vinegar and the Huevos San Juan®. Cook for 7 minutes, as the yolk should be slightly soft, then remove the egg from the hot water, placing it immediately in a bowl with cold water and ice. Remove the shell by tapping it with a spoon and set aside.
Heat the soy sauce, sake, and ginger powder until small bubbles form; when the sauce reaches that point, add the cooked Huevos San Juan® and start bathing them with a spoon for 3 minutes or until they are colored. Remove from heat, transfer to a bowl with the soy sauce, and let it rest for 10 minutes or until you finish the preparation.
Sauté the onion, garlic, carrot, and ginger in sesame oil for 5 minutes, until the ingredients start to brown and caramelize slightly. At that point, add the chicken broth, wait for it to come to a boil, and add the ramen noodles and shiitake mushrooms. Cook the ramen for 6 minutes and remove from heat.
Serve the broth with the ramen, the mushrooms, then accompany with the pancetta, the Huevos San Juan® cut in half and garnish with nori seaweed, a bit of ginger, and sliced green onion.
