Egg Bread with Chorizo

  • 1 tablespoon vegetable oil
  • 1 cup chorizo
  • 1/4 cups onion, fileted
  • 5 San Juan® eggs
  • salt
  • pepper
  • 2 telera rolls
  • butter, melted
  • mayonnaise
  • refried black beans
  • tomato, sliced
  • avocado, cut into wedges
  • onion, sliced
  • Jalapeño chile, pickled

  • Fry the chorizo in a pan over medium heat until golden, then add the onion, the pieces of Huevo San Juan®, season with salt and pepper. Cook for 5 minutes, stirring constantly.
  • Cut the bolillos in half, using a brush add butter and grill for 2 minutes. Add mayonnaise to the top and beans to the base, then add the egg with chorizo, tomato, avocado, onion, and jalapeño chiles.
  • Cut the egg bread with chorizo in half and serve it with pickled chiles and hibiscus water.
