Fry the chorizo in a pan over medium heat until golden, then add the onion, the pieces of Huevo San Juan®, season with salt and pepper. Cook for 5 minutes, stirring constantly. Cut the bolillos in half, using a brush add butter and grill for 2 minutes. Add mayonnaise to the top and beans to the base, then add the egg with chorizo, tomato, avocado, onion, and jalapeño chiles.
