Cod in Vizcaina Style Mexican

Cod in Vizcaina style has become one of the quintessential traditional Mexican recipes, especially during the Christmas season. A very tasty, homemade preparation that is easy to make.

  • 500 grams dried cod, desalting
  • 400 milliliters extra virgin olive oil
  • 6 güero chiles
  • 100 grams olives, green
  • 50 grams capers
  • 100 grams unsalted almonds, peeled
  • 1 onion, finely chopped
  • 300 grams new potatoes, cooked
  • 350 grams tomato, finely chopped
  • 1 bunch fresh parsley, finely chopped
  • 5 cloves garlic, finely chopped
  • 15 grams salt
  • 7 grams pepper

  • Sauté the onion and garlic with olive oil; when it is translucent, add the tomato and then the cod. Lower the heat and subsequently add the chiles, olives, capers, almonds, and baby potatoes.
  • Continue cooking, adjust seasoning, and at the end incorporate parsley. Cook for approximately 50 minutes on low heat.
