Flank Steak Crepes with Cheese

  • 2 tablespoons vegetable oil
  • 4 pieces skirt steak

  • 2 cups Manchego cheese, grated
  • flour prepared for Tres Estrellas® crepes
  • 1 1/2 cups milk, 360 ml
  • lime, for serving
  • pico de gallo, for serving
  • avocado, in medium squares, for serving

  • Heat a skillet over medium heat, add a little oil, and place the flank steaks. Season with salt and pepper once you place them in the skillet and cook for 5 minutes; flip the meat and cook for another 5 minutes. Remove from heat and let rest for a few more minutes.
  • Cut the flank steak and mix with the cheese. Heat for a few minutes in a skillet over medium heat. Set aside.
  • For the crepe batter, shake the bottle of Tres Estrellas® Crepe Flour, add the milk up to the mark, close the lid, and shake again for about 3 minutes until the lumps disappear. Open the lid occasionally to release air; let the batter rest for 5 minutes and shake lightly before cooking.
  • In a lightly greased non-stick skillet, pour a little of the mixture while making circular wrist movements to spread it across the entire surface.
  • Cook the batter for 2 minutes, flip it, and place the prepared flank steak filling inside, then close the crepe.
  • Serve with pico de gallo, avocado, and limes.
