French Cheese Soufflé

  • 4 tablespoons butter
  • 4 tablespoons flour
  • 1 1/2 cups cow's milk
  • 1 pinch salt
  • 1 pinch pepper
  • 1 pinch nutmeg
  • 4 egg yolks
  • 1/4 cups Emmental cheese, grated
  • 1/4 cups roquefort cheese, crumbled
  • 4 egg whites

  • Preheat the oven to 200°C.
  • In a saucepan over medium heat, add the butter and flour, stirring constantly, mix until combined. Add the milk and season with salt, pepper, and nutmeg.
  • Temper the egg yolks with the previous preparation and mix using a whisk. Incorporate into the pot and, while stirring, add the Emmental cheese and Roquefort cheese. Cook for 2 minutes and remove from heat. Let cool.
  • In a mixer, beat the egg whites until fluffy.
  • Add the egg whites to the previous mixture and fold in gently to incorporate.
  • Pour into previously greased individual molds and bake for 7 minutes.
  • Serve immediately.
