Wash and disinfect the potatoes.
In a pot, boil the potatoes, then peel and mash them, seasoning with salt and pepper to taste.
Put a little of the mashed potato on a tortilla and fold it in half, making a quesadilla.
Fry the quesadillas in a pan with oil; once ready, let them drain excess oil on absorbent paper.
