Campechanos Tacos

Campechanos tacos are a delicious combination of meats, usually pork longaniza with beef, making them one of the favorites among Mexicans, as they combine flavors and textures that in a taco become a true delight; pair with your favorite sauces and sides!

  • 3 tomatoes, grilled, for the sauce
  • 1/4 onions, grilled, for the sauce
  • 1 clove garlic, roasted, for the sauce
  • 2 morita chiles, clean and hydrated, for the sauce
  • 1/2 cups water, soaking of the chiles, for the sauce

  • 1/4 kilos longaniza
  • 1/2 kilos soft beef, chopped

  • For the sauce: Use the stone of the molcajete to grind the tomato with the onion, garlic, chiles, water, and salt until a fine texture is achieved. Then, add the cilantro, stir, and set aside.
  • Heat a skillet over medium heat, pour in the vegetable oil, and cook the onion until it is slightly caramelized, then add the longaniza and cook for 5 more minutes. Next, add the beef chuck, season with salt and pepper, and cook until the liquid has completely evaporated.
  • Serve the campechanos tacos with the sauce, avocado, and limes.
