Ingredients: 3 tomatoes, grilled, for the sauce; 1/4 onions, grilled, for the sauce; 1 clove garlic, roasted, for the sauce; 2 morita chiles, clean and hydrated, for the sauce; 1/2 cups water, soaking of the chiles, for the sauce; salt, for the sauce; vegetable oil; cilantro, finely chopped; vegetable oil; 1 cup onion, sliced; 1/4 kilos longaniza; 1/2 kilos soft beef, chopped; salt; pepper; taco-sized tortillas; lime; avocado; Pear Mundet® Sidral

For the sauce: Use the stone of the molcajete to grind the tomato with the onion, garlic, chiles, water, and salt until a fine texture is achieved. Then, add the cilantro, stir, and set aside. Heat a skillet over medium heat, pour in the vegetable oil, and cook the onion until it is slightly caramelized, then add the longaniza and cook for 5 more minutes. Next, add the beef chuck, season with salt and pepper, and cook until the liquid has completely evaporated.
