Chilacas with Cream

  • 1 kilo chilaca chile
  • 1 tablespoon vegetable oil
  • 1/2 onions, sliced
  • 1 tablespoon garlic, finely chopped
  • 1 cup white corn kernels
  • 1 cup sour cream
  • 1/2 cups requesón
  • 1 tablespoon epazote, finely chopped

  • Roast the chilacas on a griddle until they are charred, then place them in a plastic bag and let them sweat for about 15 minutes.
  • Using a knife, remove the skin, open them in half, clean, devein, and cut into strips.
  • In a skillet with oil, cook the onion, garlic, chilacas, corn, cream, ricotta, and epazote.
  • Serve the chilacas with cream in a clay pot and accompany them with corn tortillas.
