Delicious Green Mole

This typical dish of Mexican cuisine cannot be missing from your recipe book. Green mole originates from Michoacán and is truly a delight, very simple to prepare and perfect for any occasion. Serve it with beans and corn tortillas.

  • 1/2 cups pumpkin seeds, of zucchini, without skin and without salt
  • 100 grams almonds, peeled and toasted
  • 4 Poblano chiles, roasted and deveined
  • 1 cuaresmeño chile, roasted and deveined
  • 500 grams tomatillo, roasted
  • 1/2 white onions, roasted
  • 1 clove garlic
  • 2 tablespoons vegetable oil
  • 2 tablespoons Knorr® granulated chicken bouillon
  • 6 chicken breasts, boneless and skinless

  • Blend the pumpkin seeds with the almonds and a little water until a homogeneous paste forms. Set aside.
  • Blend the chiles (poblano and cuaresmeño) with the tomatoes, onion, and garlic, adding as much water as possible.
  • Heat the oil and pour in the blended tomatoes. Cook over medium-low heat for 12 minutes or until it takes on a dull green color.
  • Once seasoned, pour in the ground pumpkin seeds and cook over low heat, stirring constantly until integrated.
  • Add Knorr® Suiza Chicken Bouillon and let cook over low heat until the oil appears on the surface. Adjust seasoning.
  • Coat each hot chicken breast with the green mole and serve.
