Easy Chicken Enchiladas

  • 5 tomatoes, for the sauce
  • 1 onion, for the sauce
  • 2 cloves garlic, for the sauce
  • 1 serrano chile, for the sauce
  • 1 cup water, or broth, for the sauce
  • 10 tortillas
  • 1 cup vegetable oil, for frying
  • 2 cups chicken breast, cooked and shredded
  • 1 cup double cream cheese, or panela cheese
  • salt and pepper
  • red onion, in thin strips
  • fresh cilantro, clean and disinfected
  • avocado
  • sour cream

  • Cook the tomatoes, onion, garlic, and a serrano pepper for 8 minutes or until all the ingredients are soft.
  • Blend the ingredients in the blender until you achieve a smooth mixture.
  • Sauté the blended mixture in a pot with hot oil and season.
  • Quickly fry the tortillas so that they are soft.
  • Fill the tortillas with shredded chicken and place them on a plate.
  • Cover the tortillas with the hot sauce, add cheese, red onion, fresh cilantro, cream, and avocado. Your enchiladas will be ready!
