Fish Fillet with Green Pipián

Pipián is a stew made from toasted and ground pumpkin seeds, giving it a very unique flavor. Depending on the region, pipián can be green, white, or red, and it is a dish that has been customary since pre-Hispanic times, although it has certainly evolved over time. For example, this fish in pipián recipe will be ideal for any day of the week.

  • 2 cups pumpkin seeds
  • 1/2 cups sesame seeds
  • 1/2 cups peanuts
  • 1 sprig cinnamon
  • 3 allspice berries
  • 1 tablespoon cumin
  • 2 cups purslane
  • 1 cup fresh cilantro
  • 8 tomatillos
  • 3 serrano chiles
  • 1/4 onions
  • 1 clove garlic
  • 2 cups fish broth
  • salt
  • 3 tablespoons vegetable oil
  • 4 fish fillets
  • salt
  • pepper
  • pumpkin seeds, for decoration
  • sesame seeds, white for decoration

  • For the pipián: toast the pumpkin seeds, peanuts, sesame seeds, cinnamon, allspice, and cumin (10 minutes). Cool the ingredients and set aside.
  • In a food processor, grind the ingredients you grilled in parts, first the pumpkin seeds, then the peanuts, sesame seeds, and spices. Set aside.
  • In a blender, blend the tomato, onion, garlic, chiles, purslane, cilantro, and salt.
  • Heat a pot over medium heat and add the vegetables; then, add the ground seeds and spices, add salt, and cook for 20 minutes, until the pipián changes color. Set aside.
  • Heat a skillet over medium heat, add vegetable oil, and grill the fish for 10 minutes, seasoning with salt and pepper.
  • Serve the fish with the pipián and garnish with pumpkin seeds and sesame seeds.
