Fish Tacos al Pastor Recipe

  • 5 guajillo chiles, for the marinade, cleaned and hydrated
  • 3 ancho chiles, for the marinade, cleaned and hydrated
  • 1/4 onions, for the marinade
  • 1 clove garlic, for the marinade
  • cumin, for the marinade
  • black peppercorn, for the marinade
  • salt, for the marinade
  • 1/4 cups apple cider vinegar, for the marinade
  • 1/2 cups Smucker's® Apricot Jam, for the marinade
  • 1 kilo fish fillet, in cubes
  • corn tortillas
  • onion
  • cilantro
  • pineapple
  • salsa

  • Blend the guajillo chiles, ancho chiles, onion, garlic clove, cumin, pepper, salt, and vinegar until you achieve a thick sauce.
  • Mix the marinade with Smucker’s® apricot jam until well combined.
  • Marinate the fish in the pastor marinade in the refrigerator for 1 hour.
  • Cook the fish in a skillet over medium heat with enough oil for 10 minutes.
  • Serve the fish al pastor on a tortilla and top with onion, cilantro, pineapple, and sauce. Enjoy the fish tacos al pastor!
