Golden barbacoa tacos

  • 1 cup carrot, in medium cubes
  • 1 cup chickpeas
  • 1 cup rice
  • banana leaf, beef
  • 1 kilo lamb leg, boneless
  • coarse salt
  • allspice berry
  • 1/2 garlic heads
  • 2 bay leaves
  • water
  • corn tortillas
  • 1/2 cups Great Tradition® Oil
  • sour cream
  • queso fresco, shredded
  • salsa Borracha, to accompany

  • Add the carrot, chickpeas, rice, and a little water to a pressure cooker. Place a rack for steaming, the banana leaves, the leg of lamb, the coarse salt, the allspice, the garlic, and the bay leaf. Cover and cook for 90 minutes.
  • Remove the meat from the pot and shred.
  • Fill the tortillas with a little barbacoa and close. Repeat the process until all the meat is used.
  • Heat Gran Tradición® Oil over medium heat and fry the tacos for 5 minutes or until golden. Place on a plate with paper towels.
  • Serve the golden barbacoa tacos and add a little cream, cheese, and drunk sauce.
