Add the carrot, chickpeas, rice, and a little water to a pressure cooker. Place a rack for steaming, the banana leaves, the leg of lamb, the coarse salt, the allspice, the garlic, and the bay leaf. Cover and cook for 90 minutes. Remove the meat from the pot and shred.
