  • 2 kilos Proan® Baby Back Pork Ribs
  • water, for cooking the meat
  • 1/2 garlic heads, for cooking the meat
  • 1/4 cups onion, for cooking the meat
  • salt, for cooking the meat
  • 12 tomatillos, roasted, for the morita chili sauce
  • 4 serrano chiles, roasted, for the morita chili sauce
  • 5 morita chiles, for the morita chili sauce
  • 1/2 teaspoons cumin, for the morita chili sauce
  • 1/2 onions, roasted, for the morita chili sauce
  • 2 cloves garlic, roasted, for the morita chili sauce
  • 1/4 bunches cilantro, for the morita chili sauce
  • 2 cups pork broth, for the morita chili sauce
  • salt, for the morita chili sauce
  • 1 cup Proan® lard, for the dough
  • 4 cups masa mix for tamales, for the dough
  • 3 cups water, for the dough
  • 2 tablespoons baking powder, for the tamales
  • 1 tablespoon salt, for the tamales
  • banana leaf, roasted

  • Cut Proan® Baby Back Pork Ribs and cook in a pot with enough water, garlic, onion, and salt for 1 hour or until the meat is tender. Drain and reserve the meat and broth.
  • For the sauce: blend the tomatoes, serrano chiles, morita chiles, cumin, onion, garlic, cilantro, and pork broth. Sauté the sauce in a semi-deep pot and cook for 10 minutes. Remove and reserve.
  • For the dough: beat the lard with the paddle attachment, then add the tamale flour alternating with water, baking powder, and salt until the dough is integrated and fluffy.
  • Place a portion of dough on a previously hydrated banana leaf and add a bit of morita chili sauce and a piece of rib. Wrap the leaf into a tamale shape and fold the tip inward.
  • Place the ribs tamales in a steamer with enough water and steam for 1 hour.
