  • 1 liter water, to cook the suadero
  • 500 milliliters milk, to cook the suadero
  • 1/2 onions, to cook the suadero
  • 1/2 garlic heads, to cook the suadero
  • 5 bay leaves, to cook the suadero
  • 5 black peppercorns, to cook the suadero
  • salt, to cook the suadero
  • 1 kilo rose meat, to cook the suadero
  • 3 ancho chiles, clean, for the sauce
  • 3 morita chiles, clean, for the sauce
  • 3 guajillo chiles, clean, for the sauce
  • 1/4 onions, for the sauce
  • 1 clove garlic, for the sauce
  • 1 tomato, for the sauce
  • 1 tomatillo, for the sauce
  • 1/4 cups chicken broth, for the sauce
  • salt, for the sauce
  • pepper, for the sauce
  • 2 tablespoons lard
  • tortillas

  • In a pot, place the water, milk, onion, garlic, bay leaves, pepper, salt, and suadero. Cook for 60 minutes or until well cooked.
  • Roast the chiles, onion, garlic, tomato, and tomato in a skillet until well charred. Blend with chicken broth, salt, and pepper until you obtain a sauce.
  • Heat a little lard in a skillet, add the suadero and cook for 5 minutes. Pour in the sauce and cook for another 10 minutes.
  • Serve the suadero tacos, add onion and cilantro, and accompany with Sidral Mundet® apple flavor.
