Three Cheese Pasta with Guajillo

Treat dad to this delicious three cheese pasta with guajillo! The best part is that it has a creamy sauce made with Mexican cheeses, accompanied by crunchy guajillo chiles and a juicy cut of arrachera; this is an easy and quick dish that will win dad's heart!

  • 1 package Fusilli La Moderna®, 450 g
  • 1 cup evaporated milk
  • 1/2 cups Chihuahua cheese
  • 1/2 cups asadero cheese
  • 1/2 cups Oaxaca cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • olive oil
  • 3 guajillo chiles, cut into strips
  • 500 grams skirt steak
  • salt
  • pepper
  • chives, finely chopped

  • Heat enough water in a pot until it boils, then add salt, wait for it to boil again, and add the Fusilli La Moderna®. Cook the pasta for about 8 minutes, remove from the heat, and drain the pasta. Set aside.
  • For the cheese sauce: heat the evaporated milk, add the cheeses, season with garlic and onion powder, remove from the heat, and set aside.
  • Heat the oil in a skillet over low heat, sauté the guajillo chile, stirring constantly for 3 minutes or until it slightly changes color. Remove from heat and set aside.
  • Add the pasta to the same skillet, pour in the cheese sauce, and adjust the seasoning.
  • Heat a grill over medium heat, add a little oil, and cook the arrachera for 5 minutes. Set aside.
  • Serve the three cheese pasta with guajillo in a cast iron skillet, garnish with green onions, and accompany with arrachera.
