Pibil Mushrooms

You must try these delicious pibil mushrooms; with a marinade of achiote and guajillo chili, it’s perfect for a meatless Monday, and the best part is that you can have it ready in just 3 steps. Serve it with tortillas and some pickled onions with habanero.

  • 4 cups oyster mushrooms
  • 1 tablespoon achiote
  • 1/2 cups orange juice, natural
  • 2 guajillo chiles, seedless and hydrated
  • 1/2 white onions
  • 1/2 red onions
  • 2 cloves garlic
  • 1/4 cups vegetable broth
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 1/2 teaspoons pepper
  • 1 tablespoon olive oil
  • 1 teaspoon garlic, finely chopped
  • 1 teaspoon thyme, powder
  • 2 leaves bay
  • corn tortillas, for serving
  • onion powder, pickled

  • On a cutting board, shred the mushrooms by hand.
  • Blend the achiote with the orange juice, guajillo chili, onions, garlic, vegetable broth, oregano, salt, and pepper.
  • In a small pot, add the olive oil and cook the garlic along with the mushrooms for 5 minutes. Add the thyme, achiote sauce, bay leaf, and simmer for 10 minutes or until reduced, stirring constantly to prevent sticking.
  • Serve in tacos and accompany with pickled onions.
