Quinoa Patties with Avocado Dressing

  • 1 1/2 cups lentils, cooked
  • 3/4 cups potato, cooked
  • 1 cup fresh cilantro, finely chopped
  • 1/2 cups white onion, finely chopped
  • 1 tablespoon garlic, finely chopped
  • 1/2 cups broccoli, cooked and cut into small florets
  • 1/2 cups ear corn, yellow
  • 1/2 cups tomato, diced

  • 1 egg
  • 1/2 cups breadcrumbs
  • 5 tablespoons olive oil, for sautéing the tortillas and for the dressing
  • 1 avocado, for dressing
  • 1/2 cups fresh cilantro, for dressing
  • 1/4 cups lime juice, for dressing
  • 1 Habanero chile, roasted, for dressing
  • 1/4 white onions, for dressing

  • For the patties, process the quinoa along with the lentils and potato until you obtain a homogeneous mixture.
  • Place the previous mixture in a bowl and mix with cilantro, white onion, garlic, broccoli, yellow corn, tomato, and season with salt and pepper. Add the egg and breadcrumbs, mix well, and form your patties of approximately 30 grams with the help of your hands.
  • Heat a skillet over medium heat with two tablespoons of olive oil and cook the patties until they are cooked and golden brown on both sides, remove from the skillet and keep warm.
  • For the dressing, blend the rest of the olive oil with the avocado, cilantro, lime juice, habanero pepper, and onion until smooth. Season with salt and pepper.
  • Serve the patties with a bit of dressing and salad. Enjoy.
