Chinese Rice with Chicken

  • 1/4 cups onion
  • 1 clove garlic
  • 1 can mixed vegetables
  • vegetable oil
  • 2 cups white rice, from the previous day
  • 1 cup chicken, cooked and shredded
  • 5 tablespoons soy sauce
  • parsley, for garnish

  • Finely chop the onion and garlic and set aside. Drain the vegetables and set aside.
  • Heat a little oil in a pan and cook the onion and garlic for 3 minutes. Add the vegetables and cook for 2 more minutes. Then, incorporate the rice and cook for 5 minutes or until golden, and finally, add the chicken and soy sauce and cook for 5 more minutes.
  • Serve the Chinese rice with chicken and garnish with parsley.
