Ingredients: 1/4 cups onion; 1 clove garlic; 1 can mixed vegetables; vegetable oil; 2 cups white rice, from the previous day; 1 cup chicken, cooked and shredded; 5 tablespoons soy sauce; parsley, for garnish

Finely chop the onion and garlic and set aside. Drain the vegetables and set aside. Heat a little oil in a pan and cook the onion and garlic for 3 minutes. Add the vegetables and cook for 2 more minutes. Then, incorporate the rice and cook for 5 minutes or until golden, and finally, add the chicken and soy sauce and cook for 5 more minutes.
