Veracruz-style Shrimp

  • 2 tablespoons olive oil
  • 1/2 cups onion, finely chopped
  • 2 tablespoons garlic, finely chopped
  • 1 cup tomato, in small cubes
  • 2 cups medium-sized shrimp, clean, peeled
  • 1/2 cups capers
  • 1/2 cups olives, slice
  • 2 tablespoons parsley, finely chopped
  • 1/2 cups güero chile, sliced
  • 1 bay leaf
  • salt
  • pepper
  • white rice

  • Heat the olive oil in a skillet over medium heat. Add the onion and garlic and cook for 2 minutes.
  • Add the tomato and sauté for a bit. When the tomato softens a little, incorporate the shrimp and cook for 5 minutes.
  • Add the capers, olives, parsley, yellow chilies, bay leaf, salt, and pepper. Cook for 2 more minutes.
  • Serve the Veracruz-style shrimp in the same skillet and accompany with white rice.
