Vegan Spinach and Mushroom Ring

  • 1/2 cups onion, finely chopped

  • 2 cups spinach, cut into strips
  • 2 cups white mushroom, sliced
  • 1 cup requesón, vegan

  • Preheat the oven to 180°C.
  • In a mixer, add the flour, baking powder, salt, water, olive oil, and parsley. Knead with the hook until you achieve a smooth and soft dough. Let it rest for 20 minutes.
  • In a medium skillet, heat the olive oil, sauté the onion with the garlic and the tree chili. Add the spinach and cook until they release their juices, then add the mushrooms, season with salt and pepper.
  • Add the vegan ricotta and cook for 5 more minutes. Adjust seasoning, remove, and let cool.
  • On a floured surface, roll out the dough to a thickness of 3 mm, using a circular lid to cut a circle with a diameter of 35 cm. Make cuts in the center with a knife, forming asterisk shapes.
  • Add the filling around the cuts and join the ends together, placing it on a baking tray, brush with margarine, and sprinkle with chili flakes and sesame seeds.
  • Bake for 20 minutes, serve with hummus.
