Vegetarian Gluten-Free Pizza

  • 2 cups Tres Estrellas® rice flour, for the dough
  • 1 egg, for the dough
  • 100 milliliters olive oil, for the dough
  • 50 milliliters water, for the dough
  • 1 tablespoon oregano, for the dough
  • salt, for the dough
  • 1 cup tomato sauce
  • 2 cups Mozzarella cheese
  • 1/2 cups button mushrooms, sliced
  • 1/2 cups bell pepper, colored in strips
  • 1/2 cups black olives
  • 1/2 cups red onion, sliced
  • 1/2 cups goat cheese

  • Preheat the oven to 180° C.
  • Mix the Tres Estrellas® rice flour with the egg, olive oil, water, oregano, and salt. Knead until you have a homogeneous consistency.
  • Grease and flour a 20 cm diameter pizza tray, place the dough, and roll it out on the tray with the help of a rolling pin until you achieve an even and thin crust. Bake for 15 minutes and remove from the oven.
  • Add tomato sauce, cheese, vegetables, goat cheese, and bake for 10 more minutes.
  • Cut into slices and serve with a glass of horchata water.
