Blend the guajillo pepper, ancho pepper, garlic, and apple cider vinegar until fully combined. Set aside.
Crush the cilantro seeds, whole black pepper, whole cumin, oregano, thyme, cloves, and bay leaves in a molcajete until you obtain a powdery mixture. Add the paprika and cayenne pepper, then finish incorporating with a spoon. This mixture can also be used to season other dishes.
Grind the cauliflower, olive oil, salt to taste, the sauce, and the spice powder you reserved in a food processor. Process on high speed for 4 minutes or until you obtain a pasty mixture.
Place plastic wrap on a flat surface, then pour the vegan chorizo mixture, roll it into the shape of a sausage or log, but try to keep it tight while rolling. Freeze the chorizo until the mixture is firmer and retains the desired shape.
Remove the plastic from the mixture, cut into slices, and brown in a skillet over medium heat for 8 minutes. Remember that you can add a little oil if you wish. Remove from the skillet, serve the vegan chorizo on nopal tortilla, accompanied by onion, cilantro, and sauce to taste.
