1 serrano chile, deveined and cleaned, cut in half
1 can vegetables, pre-cooked and drained
3 pinches salt
2 pinches pepper
1 sprig fresh cilantro

Clean the cauliflower and separate it into medium pieces. Process in a food processor until finely chopped, making sure the consistency is fluffy like rice. Set aside.
In a skillet, heat the oil over medium heat and cook the onion until translucent. Add the garlic and cook for one minute.
Add the cauliflower and cook for 3 minutes on high heat until crunchy. Add the tomato puree and chili and cook on low heat for about 5 to 8 minutes until the cauliflower is cooked and the liquid is reduced.
Add the vegetables and mix very well, cooking for one more minute. Season and garnish with cilantro, serve.
