Homemade Cheese Pizza

  • 2 1/3 cups flour, for the dough
  • 1 1/4 cups water, for the dough
  • 5 grams dry yeast, for the dough
  • 1 tablespoon olive oil, for the dough
  • 1 teaspoon salt, for the dough

  • 1 cup Mozzarella cheese, grated
  • 1 cup cheddar cheese, grated
  • 1 cup Manchego cheese, grated

  • Preheat the oven to 180 °C. (357 °F)
  • For the dough, in a bowl mix the flour with the water, the dry yeast, the olive oil, the salt and with the help of your hands knead until you have an elastic and homogeneous mass.
  • Grease a bowl with a little oil and place the dough. Cover with plastic wrap and ferment until doubled in volume.
  • In a bowl, mix the mozzarella cheese, the cheddar cheese, the Manchego cheese.
  • On a clean surface cut half the dough and spread with a roller, until you have a circumference of the size of your pizza tray, with a thickness of 3 mm. (0.18 inch)
  • Place the dough in the tray and add the tomato sauce, the cheese mixture and bake for 20 minutes.
  • Cut into slices and serve.
