Season the meat and cut into squares. Fry in a pan with a little oil.
When it is cooked and golden brown, reduce the temperature to medium low heat and add the tomato in cubes, cover to release the caldito.
Add the chopped onion mix a little and cover again until the onion crystallizes. The fire should always be medium low.
Finally add the chile serrano, cover and wait for it to soften. Finally add the coriander leaves, wait for it to release its flavor and extinguish the fire.
I used flour tortillas to make the taquitos and accompany them with guacamole.
