Creamy Pasta in Tomato Sauce

  • 2 cups penne pasta, or penne
  • salt
  • 4 tomatoes, for the creamy sauce
  • 1/4 onions, for the creamy sauce
  • 1 clove garlic, for the creamy sauce
  • 1 cup chicken broth, for the creamy sauce
  • 2 cups sour cream
  • butter
  • salt
  • pepper
  • 1 cup asadero cheese, cut into cubes
  • cilantro, finely chopped

  • In a small pot over medium heat, heat the water, once it comes to a boil add the salt and cook the pasta for 10 minutes, or until al dente. Drain and set aside.
  • For the tomato sauce, blend the tomatoes, onion, and garlic. Set aside.
  • In a small pot over low heat, melt the butter and pour in the sauce, season with salt and pepper, and cook until it reaches a thick consistency, then add the cream, stir well, and add the pasta, sprinkle with cilantro, adjust seasoning, and set aside.
  • In a baking dish, place cubes of butter and then serve the pasta, add the cubes of cheese and bake for 15 minutes.
